Located on the Scornello hill between Volterra and Pomarance, Fattorie Inghirami covers an area of approximately 340 hectares. Part of the company is dedicated to cereal production, while another part is maintained as olive groves for the production of extra virgin olive oil. Surrounding the farm is a dense forest of Mediterranean plant species, enhancing the beauty of the landscape.

The agricultural company is committed to protecting the environment by adhering to organic farming plans and adopting crop rotations that preserve soil fertility. Thanks to these sustainable practices, the fields, forests, and windbreak hedges have once again become home to raptors, resident and migratory birds, just as they were in the past.
In addition to agricultural production, we also offer educational farm activities designed to teach both adults and children about respecting nature and understanding agricultural traditions. Visitors can participate in interactive workshops and educational paths that explain the processes of organic farming and the importance of biodiversity.
We also sell our flagship products: the traditional Farro Soup and our renowned Extra Virgin Olive Oil, both made with high-quality local ingredients that capture the essence of our land. Customers who stay or have stayed at Fattorie Inghirami are given priority when purchasing these exclusive products, ensuring they have the opportunity to take home an authentic taste of our production, though thereโs plenty for everyone!
Alongside the centuries-old olive groves, modern plantations have been added, and the organic extra virgin olive oil produced has the flavor of traditional oils thanks to the attention paid both during the harvest, which is carried out exclusively by hand, and during the cold pressing process.
The clayey soil and exposure to marine winds, combined with different olive cultivars (Moraiolo, Pendolino, Leccino, Frantoiano), give our oil its characteristic fruity taste with a subtle artichoke note.
Farro was the staple food of the Etruscans and Romans. Its popularity stemmed from its ability to grow well in poor soils and its high resistance to cold. Its decline was due to low yields and the difficulty of harvesting, as the grains tend to fall off when they ripen.
We have reintroduced it because it is well suited to the poor soils of the Volterra region, the cold and windy clmate of our winters, and especially for its nutritional benefits.
